According to the rules and regulations, some of the allowances offered to foreign employees in Shanghai can be deducted before tax, e.g subsidy for rental, meal and laundry... That means you have the possibility to minimize your tax. The allowance should be rendered by employer in non-cash way, or paid upon reimbursement. You should keep your official fa piaos with the title of your employer, and there must be article in relation to the "allowance" in your labor contract, instead of "salary".

Yes, if you work in China for one year, although you still pay tax in Italy, you have to pay tax in China according to China Tax Rule. After you pay the tax in China, China SAT (Tax authority) will offer you a certificate to verify the tax you pay in China, with which your Italian tax will be deducted. In case for the same income, the tax in Italy is higher than in China, you can pay only the difference in Italy.
